Single Serve Peach Crumble

Got any sweet ripe peaches? With just 1 you can bake this delicious crumble to eat alone or make more to share with family and friends. 
I love the smell and taste of a ripe and tender peach don't you? and this recipe below satisfied my desire to bake using the in season fruit.

The peach gives up it's juice and becomes even more tender and the oaty cinnamon crumble top gives a nice contrast in texture which we want in even the most comforting of home style pudding.

I adapted the recipe from recreating happiness gluten free but if you are on a gluten free diet or just want to use up that bag of ground almonds then checkout the original recipe.

Instead of the ground almonds i went with 1/2 fine semolina and 1/2 plain flour (you could just use flour) and used ground jaggery as my sugar but any brown sugar would work just as well.
I know i baked 3 but all i did was multiply the recipe quantities by 3 so i will keep my recipe similar to the original and i'll let you do the math.

The crumble is so good as is but if you feel like indulging serve along with cream or custard.

Single Serve Peach Crumble

Serves: 1 
Skill Level: Easy
Preparation Time: 10 minutes 
Cooking Time: 20 minutes

Ingredients

2 tablespoon Oats
1 tablespoon ground jaggery (any brown sugar will work)
1/2 tablespoon Semolina (fine)
1/2 tablespoon Plain flour
1/4 teaspoon cinnamon
dash of salt
1/2 tablespoon butter, room temperature
1 ripe peach, peeled and diced in 2 cm chunks

Method

  1. Pre-Heat oven to 180C.
  2. Lightly grease a ramekin
  3. Fill ramekin with chunks of peach.
  4. In small bowl put all the crumble ingredients apart from the butter and stir till thoroughly mixed, rub in butter with your hand until evenly distributed. 
  5. Place crumble on top of peach. Put ramekin on a baking tray and bake for 20 minutes or until the crumble is light brown and the peaches are bubbling.

Yumm, I can almost smell the autumn in the year (lol an expression!). I make a very apple crumble-esque cake this week, and one of my biggest 'dreams' is to have a blackberry crumble. Sigh. This sounds, looks, appears incredibly delicious.

The only time i've really enjoyed blackberries were in a pie along with apples it was amazing and i always had it when visiting my great grandma. I used to live very close to a wood that had wild blackberries :) its funny how we never appreciate what we have till its gone. If you ever come to england visit and i will bake you blackberry everything! But how do you know you like blackberries? I don't know if I like them. I just wish to taste them, along with raspberries, red currants, and oh my god blueberries too. We only grow strawberries here, raspberries are very rare and imported.
